Japanese Rhubarb Dashi Soup
A light and delicate Japanese-inspired soup made with dashi broth, rhubarb, and Japanese ingredients.

- β4 stalks Rhubarb
- β2 teaspoons Dashi Granules
- β1 piece Kombu
- β1/2 cup Soto
- β1-inch piece Ginger
- β2 stalks Green Onions
- β1 tablespoon Sesame Oil
- β1 tablespoon Soy Sauce
- β1 tablespoon Sugar

Instructions

In a large pot, combine kombu and 4 cups of water. Bring to a boil over high heat, then reduce heat to low and simmer for 10 minutes.

Remove kombu from pot and add dashi granules. Stir to dissolve.

Add sliced rhubarb, ginger, and green onions to the pot.

Simmer for an additional 10 minutes, or until rhubarb is tender.

Stir in soto, sesame oil, soy sauce, and sugar.
