Irish Chicken Stew
A hearty and comforting stew made with tender chicken and root vegetables.
Ingredients

- ●1 cup stewLow-sodium broth

Preheat the oven to 300°F (150°C).

Season the chicken legs with salt and pepper.

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Sear the chicken legs until browned on both sides.

Remove the chicken from the pot and set aside.

Add more oil if necessary, then sauté the onion until softened.

Add the carrots and potatoes, cooking until they begin to soften.

Add the stew and bring to a boil.

Return the chicken to the pot, cover, and transfer to the preheated oven.
