Smoky Korean-Style Pork Anju Jjigae
A savory and spicy Korean-inspired stew originating from the Korean peninsula, combining the flavors of anju with smoky pork.
Ingredients

- β2 tablespoons Anju gochujangKorean chili paste
- β2 tablespoons Soy sauce
- β1 tablespoon Brown sugar
- β2 inches, sliced GingerFresh
- β4 cloves, minced GarlicFresh
- β1/4 cup, chopped Green onionsFresh
- β1 teaspoon Korean chili flakes (gochugaru)
- β2 tablespoons Rice vinegar

Heat oil in a large pan over medium-high heat.

Add the pork and cook until browned, about 5 minutes. Remove from the pan.

Add the sliced ginger and cook until fragrant, about 1 minute.

Add the garlic and cook until fragrant, about 1 minute.

Add the anju gochujang, soy sauce, brown sugar, and Korean chili flakes. Stir to combine.

Add the browned pork back into the pan and stir to coat with the sauce.
