Smoky Chicken Tacos
A flavorful and spicy Mexican dish featuring smoky chicken in tacos.
Ingredients

- ●2 tablespoons smoky chipotle peppers in adobo saucecanned
- ●2 tablespoons luscious lime juice
- ●1 teaspoon mexican oregano
- ●1 teaspoon kosher salt
- ●1 teaspoon crushed mexican chili powder
- ●1/2 teaspoon cumin
- ●1/2 cup grated cheddar cheeseoptional
- ●8-10 taco shells
- ●1/4 cup, chopped cilantro

Preheat oven to 400°F (200°C).

In a blender or food processor, combine chipotle peppers, lime juice, oregano, salt, chili powder, and cumin. Blend until smooth.

Season the chicken breasts with the blended sauce and place on a baking sheet.

Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

While the chicken is baking, warm the taco shells according to package instructions.

Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.

Assemble the tacos by placing a few slices of chicken onto a warmed taco shell, followed by a sprinkle of cheese and a sprinkle of cilantro.
