Argentinian Stew with Lush Greens
A hearty stew from Argentina, featuring lush greens and tender beef, perfect for a chilly evening.
Ingredients
- β1 bunch Lush greens (such as kale or collard greens)stems removed, chopped
- β1 lb Argentinian beef (such as flank steak or skirt steak)cut into 1-inch cubes
- β2 tbsp Umami-rich ume pasteavailable at most Asian markets
- β2 cups Red stewing beef brothhomemade or store-bought
- β1 medium Diced onionchopped
- β3 cloves Garlicminced
- β Salt and pepperto taste

Heat the oil in a large Dutch oven over medium-high heat.

Sear the beef cubes until browned on all sides, about 5 minutes. Remove from pot and set aside.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the ume paste and cook for 1 minute, stirring constantly.

Add the beef broth and bring to a boil. Return the beef to the pot and cover.

Transfer to the oven and braise for 2 1/2 hours, or until the beef is tender.

Add the chopped greens to the pot and cook until wilted, about 10 minutes.
