Lush Algerian Eggplant Tagine
A flavorful North African-inspired stew made with tender eggplant, rich tagine sauce, and aromatic spices.
Ingredients

- β1 cup taginehomemade or store-bought tagine sauce
- β1 tsp algerianground cumin and coriander blend
- β1 cup peafresh or frozen peas
- β2 tbsp olive oilfor brushing eggplant
- βto taste salt
- βto taste black pepper
Instructions

Preheat the oven to 400Β°F (200Β°C).

Slice the eggplant into 1-inch thick rounds and brush with olive oil.

Season the eggplant with salt and pepper.

Place the eggplant slices on a baking sheet and roast in the oven for 20-25 minutes, or until tender.

In a large saucepan, heat the tagine sauce over medium heat.

Add the roasted eggplant slices to the saucepan and simmer for 5-7 minutes.
