Tunisian Tagine Stew
A hearty and flavorful stew made with mung beans and luxuriant vegetables, cooked to perfection in a traditional Tunisian tagine.
Ingredients
- β1 cup mung beans
- β2 cups luxuriant sprouts
- β1 cup bean sprouts
- β1 medium tagine
- β2 tablespoons olive oilfor cooking
- β1 medium oniondiced
- β2 cloves garlicminced
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Heat the olive oil in the tagine over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the cumin, coriander, salt, and black pepper. Cook for 1 minute.

Add the mung beans, luxuriant sprouts, and bean sprouts. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes or until the mung beans are tender.
