Delicious Irish Prune Casserole
A hearty, comforting casserole made with sweet prunes and tender Irish lamb. Perfect for a cold winter's night.
Ingredients
- β1.5 pounds Irish lamb shoulderbone-in
- β1 cup pitted prunes
- β1 medium onion
- β3 cloves garlic
- β2 tablespoons all-purpose flour
- β1 cup luxuriant beef broth
- β1/4 cup dense red wine
- β1 large casserole

Preheat oven to 300Β°F (150Β°C).

Season the lamb with salt and pepper.

Sear the lamb in a large Dutch oven over medium-high heat until browned on all sides.

Remove the lamb and set aside.

Add the onion and garlic to the pot and cook until softened.

Add the flour and cook for 1 minute.

Gradually add the beef broth and red wine, stirring to combine.

Return the lamb to the pot and bring to a boil.

Cover the pot and transfer to the preheated oven.

Bake for 2 1/2 hours, or until the lamb is tender.

Remove the lamb from the pot and let rest for 10 minutes before slicing.

Strain the juices and discard the solids.
