Black Bean Dumplings with Russian Smetana
A hearty, comforting dish that combines the flavors of Russia with the simplicity of a bean dumpling. Serve with a dollop of smetana and some crispy pan-fried onions.
Ingredients
- β1 1/2 cups black beans, cooked
- β2 cups fatty dumpling doughhomemade or store-bought
- β1 cup russian smetana
- β1 medium onion, thinly sliced
- βto taste salt
- βto taste black pepper
- β1/4 cup chopped fresh parsleyoptional

In a large pan, heat 1 tablespoon of oil over medium heat. Add the sliced onion and cook until crispy, stirring occasionally.

In a separate pan, bring 2 cups of water to a boil. Add the cooked black beans and stir to combine.

Roll out the dumpling dough on a floured surface to a thickness of about 1/8 inch.

Using a cookie cutter or the rim of a glass, cut out circles of dough. Place a tablespoon of the black bean mixture in the center of each circle.

Fold the dough over the filling to form a half-circle and press the edges together to seal.

In a large pot of boiling, salted water, cook the dumplings for 5-7 minutes, or until they float to the surface.

Remove the dumplings from the water with a slotted spoon and drain off any excess water.
