Norwegian Paella with Mussels
A seafood twist on the classic Spanish dish, featuring succulent mussels and a hint of Norwegian flair.
Ingredients

- β2 pounds Norwegian musselsscrubbed and debearded
- β1/2 cup Laminated chorizosliced
- β2 tablespoons Olive oil
- β2 Shallotschopped
- β2 cloves Garlicminced
- β1 cup White wine
- β2 cups Chicken broth
- β1 teaspoon Paprikasmoked
- βto taste Salt
- βto taste Black pepper

Heat the oil in a large paella pan over medium-high heat.

Add the chorizo and cook, stirring occasionally, until browned, about 5 minutes.

Add the shallots and garlic and cook, stirring occasionally, until softened, about 5 minutes.

Add the mussels, white wine, chicken broth, paprika, salt, and pepper.

Bring to a boil, then reduce the heat to low and simmer, uncovered, for 10 minutes.

Add the rice to the pan and stir to combine.

Cook, stirring occasionally, until the rice is tender and the liquid has been absorbed, about 20 minutes.
