Thai Squid Curry
A spicy Thai-inspired curry made with succulent squid and a blend of aromatic spices. Serve over steamed jasmine rice for a complete meal.
Ingredients
- β1 pound SquidFresh or frozen, cut into bite-sized pieces
- β2 tablespoons Coconut oil
- β2 tablespoons Thai red curry pasteAdjust to taste for spiciness
- β2 tablespoons Fish sauceAdjust to taste for saltiness
- β1 tablespoon Brown sugarAdjust to taste for sweetness
- β1 cup Thai basilChopped
- β2 tablespoons Lime juiceFreshly squeezed
- βto taste Salt

Heat the coconut oil in a large skillet or wok over medium-high heat.

Add the squid and cook until browned, about 2-3 minutes.

Add the Thai red curry paste and cook, stirring constantly, for 1 minute.

Add the fish sauce, brown sugar, and 1 cup of water to the skillet.
