Creamy Sweet Potato Bowl
A comforting and nutritious bowl filled with roasted sweet potatoes, creamy sauce, and various toppings.
Ingredients
- β2 large Sweet Potatoespeeled and cubed
- β1 cup Luxuriously Creamy Saucesee below for recipe
- β1 large Bowlfor serving
- β1/4 cup Chopped Fresh Herbssuch as parsley or chives
- βto taste Salt
- βto taste Black Pepper
- β2 tablespoons Olive Oil

Preheat oven to 400Β°F (200Β°C).

Toss the sweet potatoes with olive oil, salt, and black pepper on a baking sheet.

Roast in the oven for 20-25 minutes, or until the sweet potatoes are tender.

While the sweet potatoes are roasting, prepare the creamy sauce by blending together 1 cup of cashew cream, 1/2 cup of nutritional yeast, and 1 tablespoon of lemon juice.
