Braised Beef Shin Stew
A hearty and comforting Portuguese-style beef stew made with tender beef shin, richly flavored with red wine and spices.
Ingredients
- β1 kg, cut into 2.5 cm cubes beef shin
- β2 medium, chopped onion
- β3 cloves, minced garlic
- β250 ml red wine
- β500 ml beef broth
- β2 tbsp tomato paste
- β2 bay leaves
- β1 tsp, dried thyme
- β1 tsp salt
- β1/2 tsp black pepper

Heat oil in a large Dutch oven over medium-high heat.

Sear the beef cubes until browned on all sides, then set aside.

Add more oil if necessary, then sautΓ© the onion and garlic until softened.

Add the red wine and stir to deglaze the pan, scraping up any browned bits.

Add the beef broth, tomato paste, bay leaves, thyme, salt, and black pepper.

Return the beef to the pot and bring to a boil.

Cover the pot and transfer to the oven.

Braise for 2.5 hours, or until the beef is tender and falls apart easily.
