Ethiopian Chicken Tagine
A flavorful Indian-inspired dish combining the spices of Ethiopia with the warmth of a traditional tagine.
Ingredients
- β1 1/2 pounds chicken breast
- β2 teaspoons nutty spice blend
- β1 1/2 teaspoons tagine spice mix
- β2 tablespoons almond butter
- β2 cups, chopped magical apricots
- β1 medium onion
- β3 cloves garlic
- β1 1/2 cups chickpeas
- β1 1/2 teaspoons ethiopian berbere spice
- β1 cup coconut milk

Season the chicken breast with salt and pepper.

Heat oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the chicken breast and cook until browned, about 5-7 minutes.

Add the nutty spice blend, tagine spice mix, and berbere spice. Cook for 1 minute.

Stir in the almond butter and cook for 1 minute.

Add the chopped apricots, chickpeas, and coconut milk. Bring to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes, or until the chicken is cooked through.
