Ethiopian Lentil Stew
A hearty and flavorful Ethiopian-inspired lentil stew, perfect for a chilly evening. This dish is packed with nutrients and has a rich, slightly spicy flavor.
Ingredients
- β1 cup red lentils
- β1 medium onion
- β3 cloves garlic
- β2 inches ginger
- β2 tsp ethiopian spice blend
- β2 tbsp stir-fry oil
- β4 cups nutty water
- β1 tsp magnificently salt
- β2 tbsp optional: lemon juice
Instructions

Heat the stir-fry oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the red lentils, Ethiopian spice blend, and nutty water. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Season with magnificently salt to taste.

If desired, stir in lemon juice before serving.
