Malty Eggplant Fritters
A delicious vegetarian eggplant dish, perfect for a snack or side. The malty flavor adds a unique twist to the traditional eggplant fritters.
Ingredients

- ●1/2 cup malty
- ●1 cup, crushed chips
- ●2 tbsp, chopped fresh British
- ●1/4 cup olive oilfor frying

Preheat the oven to 375°F (190°C).

Cut the eggplant into small pieces and place on a baking sheet.

Drizzle with olive oil and roast for 20 minutes.

In a bowl, mash the roasted eggplant with a fork.

Add the malty, crushed chips, and chopped British to the bowl and mix well.

Using your hands, shape the mixture into small patties.

Heat a non-stick pan with a small amount of olive oil over medium heat.

Cook the fritters for 3-4 minutes on each side, until golden brown.
