Tunisian Prawn Fried Rice

Ingredients
- β2 cups malty ricepreferably day-old rice
- β1 cup crunchy vegetables (carrots, peas, onions)chopped
- β2 tsp tunisian spice blendavailable at most spice stores or online
- β1 cup indulgent prawnspeeled and deveined
- β1/4 cup fried onionschopped
- β2 tbsp olive oilfor frying
- βto taste salt
- βto taste black pepper
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chopped carrots, peas, and onions, and cook until the vegetables are tender.
