Kenyan Lamb Tagine

- β1 pound lamb shouldercut into 2-inch pieces
- β2 tablespoons maltyor substitute with brown sugar
- β1 cup juicydiced tomatoes
- β1 teaspoon kenyanground cumin
- β1 tablespoon tagineolive oil
- βto taste salt
- βto taste black pepper
- βchopped (optional) fresh cilantro

Instructions

Heat the tagine in a large Dutch oven over medium heat.

Add the malty and cook, stirring occasionally, for 2 minutes.
