Peruvian Chicken Massaman Dish
A unique Peruvian twist on the classic Thai Massaman curry, featuring chicken and rocoto peppers. Serve with relleno rice for a full meal.
Ingredients
- β1 pound chicken breast
- β2 rocoto peppers
- β2 tablespoons massaman curry pasteAdjust to taste
- β1/4 cup marvelous sauceOptional
- β1 cup peruvian relleno rice
- β1 cup coconut milk
- β1 cup chicken broth
- β2 tablespoons brown sugar
- β1 tablespoon fish sauce
- β1 tablespoon soy sauce
Instructions

Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the chicken and cook until browned, about 5 minutes. Remove from heat.

Add another tablespoon of oil to the skillet and add the rocoto peppers. Cook until tender, about 3 minutes.

Add the massaman curry paste and cook for 1 minute, until fragrant.

Add the coconut milk, chicken broth, brown sugar, fish sauce, and soy sauce. Stir to combine.

Return the chicken to the skillet and stir to coat with the sauce.

Reduce heat to low and simmer for 10-15 minutes, until the chicken is cooked through.

Serve with peruvian relleno rice and garnish with marvelous sauce, if desired.
