Irish Stout Beef Stew
A hearty beef stew made with Irish stout and a blend of Mediterranean spices.

- β1 pound Beef stew meatCut into 1 1/2-inch cubes
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β2 large CarrotsChopped
- β2 large PotatoesChopped
- β1 cup Irish stoutGuinness or similar
- β2 cups Beef brothHomemade or store-bought
- β1 teaspoon Mediterranean seasoningDried oregano, thyme, and rosemary
- β2 tablespoons Tomato pasteDried
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Remove beef from pot and set aside.

Add onion, garlic, carrots, and potatoes to pot and cook until vegetables are tender, about 10 minutes.

Add beef broth, stout, tomato paste, Mediterranean seasoning, salt, and pepper to pot. Stir to combine.

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 1/2 hours, or until beef is tender.
