Beef Tagine with Mediterranean Flavors
A hearty and flavorful stew originating from North Africa, made with tender beef and infused with the aromas of the Mediterranean.
Ingredients
- β1 pound Beefcut into 1 1/2-inch cubes
- β1/2 cup Mediterranean olivespitted
- β1/2 cup Mediterranean olivespitted
- β2 Charred red peppersdiced
- β2 cups Beef brothhomemade or store-bought
- β2 teaspoons Tagine spice blendor substitute with a combination of cumin, coriander, and cinnamon
- β2 tablespoons Coconut oilfor cooking
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste

Heat the coconut oil in the bottom of a clay or ceramic tagine or Dutch oven over medium heat.

Brown the beef cubes in batches until they are nicely browned on all sides. Transfer the beef to a plate and set aside.

Add the diced red peppers to the pan and cook until they are softened. Add the tagine spice blend and cook for 1 minute, stirring constantly.

Add the beef broth to the pan and bring to a boil. Return the beef to the pan and cover with a lid.

Simmer the tagine over low heat for 1 1/2 hours or until the beef is tender.

Stir in the pitted olives and cook for an additional 10 minutes.

Season the tagine with salt and black pepper to taste.

Serve the tagine hot, garnished with chopped fresh parsley or cilantro, if desired.
