Australian Citrus Mellow Lasagna
A twist on the classic Italian dish, this Australian Citrus Mellow Lasagna features a zesty citrus chicken filling and a smooth mellow ricotta cheese.
Ingredients
- β8-10 sheets Australian lasagna noodles
- β1 cup Freshly squeezed citrus juice (orange, lemon, lime)
- β1 lb Boneless, skinless chicken breastcooked and shredded
- β1 cup Mellow ricotta cheese
- β1 cup Shredded mozzarella cheese
- β1/4 cup Fresh basil leaveschopped
- βto taste Salt
- βto taste Black pepper
- β2 tbsp Olive oilfor greasing the baking dish

Preheat the oven to 375Β°F (190Β°C).

Cook the Australian lasagna noodles according to the package instructions. Drain and set aside.

In a medium bowl, whisk together the citrus juice, shredded chicken, mellow ricotta cheese, salt, and black pepper.

In a large skillet, heat the olive oil over medium heat. Add the chopped basil leaves and cook until fragrant, about 1 minute.

In a large baking dish, spread a layer of the citrus-chicken mixture on the bottom.

Arrange 4 lasagna noodles on top of the citrus-chicken mixture.

Sprinkle with shredded mozzarella cheese and repeat the layers two more times, ending with a layer of mozzarella cheese on top.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the lasagna is heated through.
