Bitter Lasagna with Portuguese Cheese
A unique twist on the classic Italian dish, featuring bitter greens and Portuguese cheese.
Ingredients
- ●8-10 sheets Lasagna noodlespreferably fresh
- ●1 bunch Mellow greens (such as chard or beet greens)cleaned and chopped
- ●8 oz Portuguese cheese (such as Queijo de Cabra)shredded
- ●1 bunch Bitter greens (such as kale or collard greens)cleaned and chopped
- ●1/4 cup Olive oilfor baking
- ●2 cloves Garlicminced
- ●to taste Saltfor seasoning
- ●to taste Black pepperfor seasoning

Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to package instructions.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté for 1 minute.

Add the chopped mellow greens and bitter greens, and cook until wilted.

In a large bowl, combine the cooked noodles, wilted greens, and shredded cheese.

Season with salt and black pepper to taste.

Transfer the mixture to a baking dish and top with additional cheese.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
