Jamaican Sweet Potato Stew
A flavorful and comforting stew made with sweet potatoes, jamaican seasonings, and a hint of sweetness.
Ingredients
- β2 large Sweet potatoespeeled and chopped
- β1 tsp Jamaican stew seasoningstore-bought or homemade
- β1 medium Mellow onionchopped
- β1 medium Golden bell pepperchopped
- β1 large Potatochopped (optional)
- β2 cups Vegetable brothlow-sodium

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped bell pepper and cook for an additional 2 minutes.

Add the chopped sweet potatoes and potato (if using), and cook for 2-3 minutes.

Add the jamaican stew seasoning and vegetable broth, and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the sweet potatoes are tender.
