Jamaican Chicken Curry
A flavorful and aromatic curry dish made with chicken, Jamaican spices, and a hint of sweetness.
Ingredients
- β1 1/2 pounds Chicken breastcut into 1-inch pieces
- β2 tablespoons Jamaican curry powder
- β1 cup Mellow curry saucesee note
- β2 tablespoons Coconut oilfor sautΓ©ing
- β1 medium Oniondiced
- β3 cloves Garlicminced
- β1 tablespoon Gingergrated
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken and set aside.

In the same skillet, add onion, garlic, and ginger. Cook until softened, about 3-4 minutes.

Stir in curry powder and cook for 1 minute.

Add curry sauce and stir to combine.

Return chicken to the skillet and stir to coat with curry sauce.

Season with salt and pepper to taste.
