Jamaican Mellow Curry Bowl

Ingredients
- β1 block tofufirm or soft, whichever you prefer
- β2 tsp jamaican curry powder
- β1 tsp mellow curry powder
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 medium bell pepperchopped
- β2 tbsp tomato paste
- β1 can coconut milk
- βto taste salt
- βto taste black pepper

In a large pan, heat some oil over medium heat.

Add the onion and garlic and cook until softened.

Add the bell pepper and cook for another 2-3 minutes.

Add the tomato paste and cook for 1-2 minutes.

Add the curry powder and cook for 1-2 minutes, until fragrant.

Add the tofu and cook until browned.
