Oaxacan Mellow Birria Stew
A rich and flavorful stew originating from Oaxaca, Mexico. Mellow cheese adds a creamy twist to the classic dish.
Ingredients
- β1 cup Mellow cheeseshredded
- β1 pound Birria meat (beef or goat)boneless and cut into small pieces
- β1/2 cup Morbier cheesesliced
- β2 medium Jammy onionschopped
- β2 tablespoons Oaxacan chili powder
- β2 tablespoons Vegetable oil
Instructions

Heat oil in a large Dutch oven over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the birria meat and cook until browned on all sides, about 5 minutes.

Add the Oaxacan chili powder and stir to combine.

Add 2 cups of water and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours or until the meat is tender.

Stir in the shredded mellow cheese until melted.

Season with salt and pepper to taste.
