Galaktoboureko Cheesecake Bars
A Greek-inspired dessert featuring a creamy cheesecake filling wrapped in flaky phyllo pastry, just like the traditional galaktoboureko.
Ingredients
- β8 ounces mellow cream cheese
- β1 package (usually 16-20 sheets) tender phyllo doughthawed according to package instructions
- β1 cup sugar
- β2 large eggs
- β1 teaspoon vanilla extract
- β2 tablespoons galaktoboureko syrup (or honey)
- β2 ripe bananas
- β1/4 cup, melted unsalted butter

Preheat oven to 350Β°F (175Β°C).

In a medium bowl, whisk together cream cheese and sugar until smooth.

Beat in eggs one at a time, followed by vanilla extract.

Arrange phyllo sheets on a flat surface, brushing with melted butter between each layer.

Cut phyllo into desired bar size and spoon a dollop of cheesecake mixture onto the center of each sheet.

Fold the phyllo in half to enclose the filling, pressing edges to seal.

Place bars on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.

While bars are baking, prepare a syrup by mixing galaktoboureko syrup and water in a small bowl.

Remove bars from oven and brush with syrup while still warm.
