2. In a large Dutch oven, combine pork belly, sake, mirin, and 1 tablespoon of sesame oil.

3. Braise pork belly for 2 hours, or until tender and caramelized.

4. Meanwhile, prepare crunchy crispy onions by separating onion rings into individual straws.

5. Fry onion straws in hot oil until crispy, then drain on paper towels.

6. To assemble kaiseki course, place a portion of Japanese rice on a plate, followed by a slice of braised pork belly.
