Filipino Vegan Fried Rice
A vegan adaptation of the popular Filipino dish, using plant-based ingredients to replicate the classic flavors.
Ingredients
- β1 cup Shrimp-free imitation shrimp
- β2 tbsp Melted vegetable oil
- β2 cups Fried ricepreferably leftover or day-old rice
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 cup Vegetable brothlow-sodium
- β2 tbsp Soy sauceor tamari for gluten-free
- β1 tsp Vegan oyster sauce
- β1/4 cup Green onionchopped
- β1 tsp Sesame oil

Heat melted vegetable oil in a large skillet or wok over medium-high heat.

Add the chopped onion and minced garlic and sautΓ© until the onion is translucent.

Add the imitation shrimp and cook until lightly browned.

Add the vegetable broth, soy sauce, and vegan oyster sauce. Stir to combine.

Add the fried rice to the skillet or wok and stir-fry for about 5 minutes, breaking up any clumps with a spatula.

Transfer the rice mixture to a serving platter and garnish with chopped green onion and a drizzle of sesame oil.

Optional: Add other vegetables, such as diced bell peppers or sliced mushrooms, to the skillet or wok with the onion and garlic for added flavor and nutrition.
