Midnight Poached Clams

Ingredients
- β1 pound large clamsscrubbed and rinsed
- β2 tablespoons fish sauceor to taste
- β2 tablespoons lime juicefreshly squeezed
- β1/4 cup chopped cilantrooptional
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β4 cups water
- β1 tablespoon brown sugar
- β1/4 teaspoon chili flakes

Rinse the clams under cold water and scrub them clean.

In a large saucepan, combine the water, fish sauce, lime juice, brown sugar, and chili flakes.

Add the minced garlic and grated ginger to the saucepan and bring the mixture to a simmer.

Reduce the heat to low and add the clams to the saucepan,cover with a lid.

Poach the clams for 3-5 minutes or until they open.
