Tunisian Midnight Chorizo Tagine
A spicy and flavorful Tunisian-inspired stew made with chorizo, perfect for a midnight craving.
Ingredients
- β1 pound Chorizo SausageSlice the chorizo into 1/2-inch pieces
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β2 tablespoons Tomato Paste
- β1 (14 oz) can Canned Crushed TomatoesDiced
- β1 teaspoon ground cumin Spices1 teaspoon smoked paprika
- βto taste Salt and Pepper

Heat oil in a large Dutch oven over medium-high heat.

Add the chorizo and cook until browned, about 5 minutes.

Remove the chorizo from the pot and set aside.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the crushed tomatoes, cumin, smoked paprika, salt, and pepper to the pot.

Stir to combine, then add the cooked chorizo back to the pot.
