Keto Mexican Midnight Tacos
A low-carb twist on traditional tacos, featuring midnight-colored beef and topped with crispy slaw and a squeeze of fresh lemon.
Ingredients

- β1 cup Crispy Slaw (made with midnight lettuce, lime juice, and Mexican cheese)
- β2 tbsp Lime Juice
- β1 cup shredded Mexican Cheese
- β1 tsp Cumin
- β1 tsp Chili Powder
- βto taste Salt
- βto taste Black Pepper

Preheat oven to 400Β°F (200Β°C).

In a large skillet, cook ground beef over medium-high heat, breaking it up with a spoon as it cooks.

Add cumin, chili powder, salt, and pepper to the skillet and stir to combine.

Using a slotted spoon, transfer the cooked beef to a bowl and set aside.

In the same skillet, add the crispy slaw and cook for 2-3 minutes, until slightly softened.

To assemble the tacos, place a scoop of the beef onto a low-carb taco shell, followed by a spoonful of the crispy slaw.
