Roasted Irish Beef with Mighty Gravy

- β2 cups mighty beef broth
- β2 cups roasted vegetables
- β2 tbsp olive oil
- β2 tbsp all-purpose flour
- β2 tbsp butter
- β1 cup red wine (optional)
- β2 sprigs fresh thyme

Rinse the Irish beef roast and pat it dry with paper towels.

Season the beef with salt and pepper.

In a large Dutch oven, heat the olive oil over medium-high heat.
