Grilled Portobello Mushroom Gyro
A Greek-inspired twist on traditional gyros, featuring grilled portobello mushrooms, crispy pita bread, and a tangy tzatziki sauce.
Ingredients
- β4 portobello mushroomsstemmed and cleaned
- β1 cup tzatziki saucestore-bought or homemade
- β4-6 pita breadgluten-free or traditional
- β1/2 red onionthinly sliced
- β1 tomatodiced
- β1/2 cup feta cheesecrumbled (optional)
- β2 tbsp olive oilfor brushing
- βto taste salt and pepper

Preheat grill to medium-high heat.

In a small bowl, whisk together tzatziki sauce, olive oil, salt, and pepper.

Brush the mixture onto both sides of the portobello mushrooms.

Grill the mushrooms for 3-4 minutes per side, or until tender and slightly charred.

Warm the pita bread by wrapping it in foil and heating it in the oven for 5 minutes.

Assemble the gyros by spreading a layer of tzatziki sauce on each pita, followed by a grilled mushroom, some red onion, tomato, and feta cheese (if using).
