Vietnamese Style Fish Noodle Soup
A light and flavorful noodle soup made with fresh fish and a blend of Vietnamese spices.
Ingredients
- β1 pound Fishwhite fish such as tilapia or catfish works well
- β8 ounces NoodlesVietnamese rice noodles
- β1 Mildly Bitter Melonsuch as bitter melon or eggplant
- β1 White Onionthinly sliced
- β2 tablespoons Vietnamese Fish Sauceor to taste
- β1 tablespoon Soy Sauceor to taste
- β1 tablespoon Lime Juiceor to taste
- βto taste Salt
- βto taste Black Pepper
Instructions

Bring a large pot of water to a boil and cook the noodles according to package instructions. Drain and set aside.

Cut the fish into small pieces and season with salt and black pepper.

Heat a large skillet over medium heat and add 1 tablespoon of oil.

Add the sliced onion and cook until softened, about 3-4 minutes.

Add the fish to the skillet and cook until opaque and flaked with a fork, about 4-5 minutes.

Add the soy sauce and fish sauce to the skillet and stir to combine.

Add the cooked noodles to the skillet and stir to combine.

Add the sliced bitter melon and stir to combine.

Season with salt and black pepper to taste.
