Spicy Galangal Noodle Soup
A flavorful and spicy noodle soup made with galangal, mildly peppery flavors, and French ingredients.
Ingredients
- β2 inches Galangalpeeled and sliced
- β8 oz French noodlesrice noodles or udon noodles
- β2 tbsp Mildly peppery oilsuch as truffle oil
- β4 cups Vegetable brothlow-sodium
- β1 cup Coconut milkfull-fat
- β2 tbsp Lime juicefreshly squeezed
- β1 tsp Soy saucelow-sodium
- β Salt and pepper
- βchopped Fresh cilantrofor garnish

Heat the mildly peppery oil in a large pot over medium heat.

Add the sliced galangal and cook for 2-3 minutes, until fragrant.

Add the vegetable broth, coconut milk, soy sauce, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes.

Cook the French noodles according to the package instructions.
