Mochi Scotch Bonnet Cookies
Spicy and sweet cookies using mochi and scotch bonnet peppers for an interesting flavor combination.
Ingredients

- β1/4 cup, finely chopped scotch bonnet peppers
- β1/2 cup coconut oil
- β1/2 cup sugar
- β1 tsp vanilla extract
- β1 tsp baking soda

Preheat oven to 350Β°F (180Β°C). Line a baking sheet with parchment paper.

In a large bowl, cream together coconut oil and sugar until light and fluffy.

Add finely chopped scotch bonnet peppers and mix until well combined.

Stir in vanilla extract and baking soda.

Gradually add in mochi, mixing until a dough forms.

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.

Bake for 15-20 minutes or until lightly golden brown.

Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
