Braised Burdock with Irish Sausage
A hearty and flavorful stew made with burdock root, Irish sausage, and mildly spicy seasonings.
Ingredients
- β1 pound Irish sausagecasings removed
- β2 medium Burdock rootpeeled and sliced
- β1 medium Onionchopped
- β1 medium Gobopeeled and sliced
- β2 medium Carrotspeeled and sliced
- β4 cups Mildly spicy brothhomemade or store-bought
- β Bowlfor serving

1. Heat oil in a large Dutch oven over medium-high heat.

2. Add the chopped onion and cook until softened, about 5 minutes.

3. Add the sliced burdock and gobo, and cook for an additional 5 minutes.

4. Add the Irish sausage and cook, breaking it up with a spoon, until browned, about 5 minutes.

5. Add the carrots, mildly spicy broth, and bring to a boil.

6. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the vegetables are tender.
