Filipino-Style Pork Belly Tacos
A fusion of Filipino and Mexican flavors in a delicious taco. The pork belly is slow-cooked in a mixture of soy sauce, vinegar, and spices, then served in a crispy taco shell with a side of noodles.

- β1 pound Pork BellyCut into 1-inch cubes
- β1/4 cup Mildly Seasoned Filipino SauceA mixture of soy sauce, vinegar, and spices
- β1 cup NoodlesCook according to package instructions
- β2 tablespoons Lime JuiceFreshly squeezed

- β6-8 shells Taco ShellsCrispy taco shells for serving
- β1 cup Sliced RadishesThinly sliced
- β1 cup Sliced CucumberThinly sliced
- β1/4 cup Sliced ScallionsThinly sliced

In a large Dutch oven, combine the pork belly cubes, Filipino sauce, and lime juice. Bring to a boil over medium-high heat, then cover and transfer to the oven. Braise the pork for 2 1/2 hours, or until it is tender and caramelized.

While the pork is cooking, cook the noodles according to package instructions. Drain and set aside.

When the pork is done, remove it from the oven and let it cool slightly. Using two forks, shred the pork into bite-sized pieces.

Warm the taco shells according to package instructions. Spoon some of the shredded pork into each shell, followed by some of the cooked noodles, sliced radishes, cucumber, and scallions.

Garnish with chopped cilantro and serve immediately.
