Vietnamese Chicken Noodle Soup
A light and flavorful Vietnamese-inspired chicken noodle soup made with smoked chicken, mildly seasoned vegetables, and fresh herbs.
Ingredients
- β1 lb Chicken breastSmoked chicken can be substituted for regular chicken
- β2 medium Carrots
- β2 stalks Celery
- β1 medium OnionChopped
- β2-inch piece GingerSliced
- β1 cup NoodlesRice noodles or glass noodles
- β4 cups Vegetable brothLow-sodium broth
- β2 tbsp Fish sauceOptional
- β2 tbsp Soy sauceOptional
- β1/4 cup Fresh cilantroChopped
Instructions

Bring the vegetable broth to a boil in a large pot.

Add the sliced ginger and chopped onion to the pot and cook for 2-3 minutes.

Add the smoked chicken breast to the pot and cook until heated through.

Add the carrots and celery to the pot and cook for 5 minutes.

Add the noodles to the pot and cook according to package instructions.

Stir in the fish sauce and soy sauce (if using).
