Spanish Sausage Paella
A traditional Spanish dish featuring smoky sausages and charred vegetables. Easy to make and perfect for a weeknight dinner.
Ingredients
- β1 pound Spanish sausagespreferably chorizo or morcilla
- β2 teaspoons Mildly smoked paprikaadds smoky flavor to the dish
- β1 Charred red bell pepperfrom a previous roast or grill
- β1 cup Spanish ricepreferably short-grain rice
- β1 medium Diced onion
- β3 cloves Garlicminced
- β2 cups Chicken broth
- β2 tablespoons Olive oil
- βto taste Salt
- βto taste Black pepper
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the Spanish sausages and cook until browned, about 5 minutes.

Add the charred red bell pepper, smoked paprika, chicken broth, salt, and black pepper. Stir to combine.

Add the Spanish rice and stir to coat with the oil and distribute the ingredients evenly.

Bring the mixture to a simmer and cook, uncovered, for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.

Remove from heat and let rest for 5 minutes before serving.
