Smoky Chicken and Vegetable Tagine
A traditional North African stew made with smoky flavors and tender chicken. Serve over couscous for a delicious and satisfying meal.
Ingredients
- β1 1/2 pounds chicken breast or thighs
- β2 teaspoons smoky paprikasmoky flavor
- β1 teaspoon mildly spicy cuminmild heat
- β1/2 teaspoon egyptian allspicewarm, aromatic flavor
- β1/2 teaspoon ground black pepperpeppery flavor
- β2 tablespoons olive oilrich, fruity flavor
- β1 large onionsweet, caramelized flavor
- β3 cloves garlicpungent, savory flavor
- β1 large diced bell peppercrunchy texture
- β1/4 cup chopped fresh parsleyfresh, herbal flavor

Heat the olive oil in a large Dutch oven over medium heat.

Add the onion and cook, stirring occasionally, until caramelized, about 8 minutes.

Add the garlic and cook for 1 minute.

Add the chicken and cook until browned, about 5-7 minutes.

Stir in the cumin, allspice, paprika, and pepper.

Add the bell pepper and cook until tender, about 5 minutes.

Add 1 cup of water to the pot and bring to a simmer.

Cover the pot and cook until the chicken is cooked through and the sauce has thickened, about 20-25 minutes.
