Spicy Azifa Lentil Tacos
A unique twist on traditional lentil tacos, with the bold flavors of Ethiopian azifa and a spicy kick.
Ingredients
- β1 cup Red LentilsRinsed and drained
- β2 tsp Azifa Spice MixStore-bought or homemade
- β2 tbsp Lime JuiceFreshly squeezed
- β1 tsp CuminGround
- β1/2 tsp Chili PowderSpicy
- β1/2 cup OnionDiced
- β2 cloves GarlicMinced
- β4-6 TortillasCorn or flour
- β1 cup Shredded CheeseOptional

Heat oil in a pan over medium-high heat.

Add onion and cook until softened, about 3 minutes.

Add garlic and cook for 1 minute.

Add red lentils, azifa spice mix, cumin, and chili powder. Cook for 1 minute.

Add lime juice and 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble tacos by spooning lentil mixture onto tortillas and topping with cheese and any desired toppings.
