Spicy Korean Chicken Bowl
A flavorful and spicy Korean-inspired chicken bowl recipe. Marinated chicken is grilled to perfection and served over a bed of rice with crunchy kimchi slaw.
Ingredients
- β4 lbs chicken breastcut into 1-inch pieces
- β2 tbsp gochujang sauce
- β1 tbsp soy sauce
- β1 tsp brown sugar
- β3 cloves garlicminced
- β1 tsp gingergrated
- β2 cups rice
- β1 cup kimchi
- β1 medium cucumbersliced
- β1/4 cup green onionthinly sliced

Marinate the chicken in a mixture of gochujang sauce, soy sauce, brown sugar, garlic, and ginger for at least 2 hours.

Preheat grill to medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes per side, or until cooked through.

Cook the rice according to package instructions.

In a small bowl, mix together kimchi, cucumber, and green onion.

To assemble the bowls, place a scoop of rice on the bottom, followed by the grilled chicken, kimchi slaw, and any additional toppings as desired.
