Spicy Norwegian Curry Tofu Bowl
A flavorful and spicy curry made with Norwegian influences, served with crispy tofu and served over a bed of fluffy rice.
Ingredients
- β1 block of firm tofu
- β2 tablespoons Norwegian red curry paste
- β1 tablespoon mildly spicy curry powder
- β2 tablespoons coconut oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup brown rice

Heat the oil in a large saucepan over medium-high heat.

Add the onion and cook until lightly browned, about 3-4 minutes.

Add the garlic and cook for 1 minute.

Add the curry paste and cook for 1-2 minutes, stirring constantly.

Stir in the curry powder and cook for 1 minute.

Add the tofu and cook until golden brown, about 5-6 minutes.

Stir in 1 cup of water and bring to a simmer.

Reduce the heat to low and let simmer for 10-12 minutes.
