Slovakian Spicy Lamb Stew
A hearty and flavorful stew originating from Slovakia, featuring tender lamb and a spicy kick.
Ingredients
- β1 pound lamb shoulder
- β1 pound mildly spicy sausage
- β1 medium onion
- β3 cloves garlic
- β2 medium carrots
- β2 large potatoes
- β2 tablespoons tomato paste
- β1 cup red wine
- β2 cups beef broth
- β1 teaspoon caraway seeds

Heat oil in a large pot over medium-high heat. Brown the lamb shoulder on all sides, about 5 minutes. Remove the lamb from the pot and set aside.

Add the sliced onion to the pot and cook until caramelized, about 10 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the sliced carrots and potatoes to the pot and cook for 5 minutes.

Add the browned lamb shoulder back to the pot, along with the mildly spicy sausage, tomato paste, red wine, and beef broth.

Stir in the caraway seeds and bring the stew to a boil.

Reduce the heat to low and simmer, covered, for 2 hours, or until the lamb is tender.
