Spanish Chicken Roast
A flavorful and spicy chicken roast with a Spanish twist, perfect for a weeknight dinner.
Ingredients
- ●3 lbs 1 whole chicken (3 lbs)remove giblets and rinse
- ●1/4 cup 1/4 cup olive oilfor roasting
- ●2 tsp 2 tsp smoked paprikaadd smoky flavor
- ●1 tsp 1 tsp garlic powderfor depth of flavor
- ●1 tsp 1 tsp onion powderfor depth of flavor
- ●1 tsp 1 tsp saltfor seasoning
- ●1/2 tsp 1/2 tsp black pepperfor seasoning
- ●1/4 cup 1/4 cup chopped fresh parsleyfor garnish
- ●1/4 cup 1/4 cup chopped fresh oreganofor garnish

Preheat oven to 425°F (220°C).

Rinse the chicken and pat dry with paper towels.

In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Garnish with chopped parsley and oregano.
