Malaysian Inspired Satay Chicken with French Twist
A French-inspired satay dish with marinated chicken, grilled to perfection and served with a sweet and mildly spicy peanut sauce.
Ingredients

- β2 tablespoons peanut oilfor grilling
- β2 tablespoons fish sauceor substitute with soy sauce
- β2 inches grated gingerfresh
- β3 cloves garlicminced
- β2 tablespoons corianderground
- β1 tablespoon brown sugaror substitute with honey
- β1 cup peanutsor substitute with cashews
- β1 cup coconut milkfull-fat

In a bowl, whisk together fish sauce, ginger, garlic, coriander, brown sugar, and coconut milk.

Add the chicken to the marinade and coat evenly. Let marinate for at least 30 minutes or up to 2 hours.

Preheat grill to medium-high heat. Thread the marinated chicken onto skewers.

Grill the chicken for 8-10 minutes per side or until cooked through.

Meanwhile, blend peanuts into a smooth paste and mix with peanut oil.
