Sweet Ukrainian Noodle Pudding
A traditional Ukrainian dessert made with noodles, sweet almond milk, and topped with a caramelized sugar crust.
Ingredients
- β8 oz Ukrainian noodlespreferably homemade
- β2 cups Sweet almond milkor regular milk
- β1 cup Granulated sugarfor the caramelized crust
- β4 tbsp Unsalted buttermelted
- β2 Egg yolksfor the custard base
- β1 tsp Vanilla extractoptional
- βpinch Saltto balance flavors

Preheat oven to 375Β°F (190Β°C).

Cook the Ukrainian noodles according to package instructions. Drain and set aside.

In a medium saucepan, combine the sweet almond milk, granulated sugar, and unsalted butter. Heat over medium heat, stirring occasionally.

In a separate bowl, whisk together the egg yolks and vanilla extract (if using). Temper the egg yolks by slowly pouring the warm milk mixture into the egg yolks, whisking constantly.

Return the saucepan to the stovetop and cook over low heat, stirring constantly, until the custard thickens.

Stir in the cooked noodles and a pinch of salt. Pour the mixture into 6 (1/2 cup) ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 25-30 minutes or until the tops are set and the edges are lightly golden brown.

Remove the ramekins from the water bath and let cool to room temperature.

Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin. Caramelize the sugar with a kitchen torch or under the broiler.
